Bashful Bison Deli and Market

The Bashful Bison moved into our Mothership building in 2024. Run by Chef Scott Brinker, the Bison is a from-scratch deli built around South Dakota farmers and ranchers. They smoke their own meats, bake their own breads, and make their own pickles and jams. The menu is a tour of the Black Hills in sandwich form, with every item named after a local town or landmark. Grab a Sturgis, a Paha Sapa, or a Spearfish and pair it with a Hay Camp beer. It's the kind of place reviewers keep calling the best sandwich spot in Rapid City, and we're not going to argue with them.
